I prefer to make this in the northern Italian style with a taleggio béchamel because why not like this is health food. This recipe requires two previous recipes to assemble Bolognese and Eggplant.


pasta sheets cut to the length of the pan

bolognese

basic tomato sauce

taleggio béchamel

mozzarella

parmesan cheese

fried eggplant


Ladle enough basic tomato sauce to coat the bottom of the baking pan. Place a layer of pasta and sauce with bolognese, spoon some of the béchamel over the top.

Place a new layer of pasta over top. Ladle and coat with a generous amount of basic tomato sauce. Layer with fried eggplant, mozzarella and parmesan.

Repeat over and over with those layers until complete. Cover the top layer with tomato sauce and drizzle with béchamel.  Bake in a 375 degree oven for 60 minutes. Let it rest 30 minutes before eating
