Roasted Pork Tacos

There is nothing better than fatty, tender, juicy roasted pork. When I make roasted pork tacos I prefer to make the pork in the Cuban style. I do this for two reasons: its delicious and the next day is Cubano sandwich Time! Tacos are the perfect dish to experiment with because of the amount  versatile, proteins and flavors you can add to the them.

The Roasted Pork

Cuban Roast Pork

Ingredients

  • 3 1/2 pound pork butt
  • 1/2 cup olive oil
  • 3/4 orange juice
  • 1/2 cup lime juice
  • 6 cloves garlic
  • 1/2 cup cilantro
  • 1 tbs fresh oregano
  • 2 tps ground cumin
  • 1 tps salt
  • 1 tps pepper

Place everything, but the pork into a blender and blitz until combined. Place the pork and marinade into a resealable plastic bag. Work the marinade into the pork then place into the refrigerator overnight.

Preheat the oven 425. Take the pork out of the refrigerator and the marinade at least 45 minutes before cooking. Place the pork on a rack and season with salt and pepper. Transfer the marinade to the bottom of the roasting pan. Add water to the pan if needed during cooking.Cuban Pork Fully MarinatedRoast for 30 minutes then lower the temperature to 350 and cook for ~2.5 hrs or until a thermometer inserted in the center registers 160. Transfer to a cutting board and let it rest 30 minutes.Cuban Pork RoastingRoasted PorkReduce the liquid to ~ 1/2 a cup and set aside.


The Tacos

Ingredients

  • 1/4 tsp cumin
  • 1/2 tsp lime juice
  • cilantro
  • lime slices
  • 1 small onion (sliced thin)
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon sugar
  • Corn Tortillas

Instructions

  1. Mix the sour cream, cumin, lime juice in a small bowl and season with salt and pepper.
  2. Next we'll make a quick pickled onion by placing onion slices in a medium bowl. Pour vinegar and 1/2 cup warm water over onion. Stir in sugar and season with salt. Let them pickle ~ 30 minutes then drain.
  3. Warm the tortillas on a griddle. Slice the pork, dip into the reduced drippings liquid. Place the pork on the tortillas. Drizzle with some of the sour cream, pickled onion, cilantro and serve with sliced lime.

Pair these with a delicious classic Cinco de Mayo Margarita made with Patron Tequila. These are without a doubt my favorite Margarita and my go turn when hosting a dinner party.

Ingredients

  • 1 1/2 oz Patrón Silver
  • 3/4 oz Patrón Citrónge Lime
  • 1/2 oz Lime juice
  • 1/2 oz Simple syrup

Instructions

  1. Shake ingredients with ice. Serve straight up or on the rocks. Garnish with a lime wedge.
