Bolognese with Homemade Fettuccini

I had this sudden urge to make homemade Fettuccini pasta and Bolognese. If theres any other pasta dish that is near and dear to my heart other than cacio e pepe, it’s bolognese. There are various versions of this dish region to region in Italy, but this is the version of the dish in my own variation.

I’m not a huge fan of ground beef in this sauce because it tends to have a chew and I hate veal with a passion, so this version is 100% pork. The trick to this entire dish is using high quality pancetta as the base flavor and grinding it into a paste to render with the vegetables.

Note to self, before deciding to make homemade pasta make sure your Kitchen Aid Stand Mixer works and you can find your rolling pin. I have no problem doing this by hand, but having to use a wine bottle to roll out the pasta was a little much. That being said the pasta turned out perfect, with the thickness and chew I was looking for.

Bolognese with Homemade Fettuccini

Cook Time: 1 hour, 20 minutes

Serving Size: 4

Ingredients

  • 1 lbs ground pork
  • 1/2 lbs pancetta
  • 1 small cans tomato paste
  • 1/2 cup spanish onion (fine dice)
  • 1/2 cup carrot (fine dice)
  • 1/2 cup celery (fine dice)
  • 1 cups red wine
  • 1/2 cup whole milk
  • 1 sprig of thyme
  • 1/8 tsp grated nutmeg
  • 1/2 cup heavy cream

Instructions

  1. Finely dice the onions, celery and carrots. Cube the pancetta to small enough pieces to be able to break down in the food processor evenly. Puree until it becomes a paste. Preheat a sauce pan over medium heat and add the pancetta. Render for about 1 minute then add the vegetables. Cook until translucent (~10 minutes).
  2. Add the ground pork. Using a spatula mix and break down the pork. This stage is critical as you don't want big chunks of pork in the final product. Once the pork is broken down and cooked add the tomato paste. Mix the tomato paste thoroughly and cook for 2 minutes.
  3. Pour the wine and milk into the sauce. Grate the in nutmeg and add the thyme. Reduce the pan down simmer and let it cook roughly 1 hour 20 minutes. Scrap the bottom of the pan and mix often.
  4. To finish skim the fat and then add the heavy cream. Season with pepper.

Cook the pasta to al dente, reheat the sauce in a frying pan over medium heat. Add 1/2 of the sauce. Drop the cooked pasta and toss. Sauté for 2 minutes until the sauce is worked through all the pasta then serve with grated parmigiano cheese over the top.

      Thanks, I haven’t made fresh pasta completely by hand in a long time but this fun.
